Frozen Blackberry-Lime Margarita with a Lime popsicle garnish

I am a huge fan of margaritas. My go-to favorite is a classic margarita on the rocks (and don’t skip on the salted rim), but during the Spring and Summer, I switch things up and go with this refreshing frozen version. Today, I am sharing a Frozen Blackberry-Lime margarita recipe that is tart, sweet, and salty all at once. And a fun bonus… it has a lime popsicle as a garnish. Let’s call it a “Margarita Poptail”!

YUM!! Let’s get started!

Margarita Ingredients:

  • 4 ounces of silver tequila
  • 2 ounces of triple sec
  • 4 ounces of fresh lime juice
  • Lime popsicles
  • 4 ounces of blackberry syrup (recipe below)
  • Ice
  • coarse salt for the rim
  • blackberries and lime slices for garnish

Blackberry Simple Syrup Ingredients:

  • 1/2 cup of water
  • 1/2 cup of granulated sugar
  • 2 teaspoons of lime juice
  • 6 oz of fresh blackberries

Directions for Blackberry Simple Syrup

First, place the blackberries, sugar, and lemon juice in a medium saucepan over medium heat on the stove. Gently mash the berries to bring out the juices, then add the water and stir to combine.

Next, let the mixture simmer for about 10 minutes, occasionally stirring, until the sugar has dissolved and the syrup has thickened slightly. Allow the syrup to cool to room temperature, then pour into a container over a fine-mesh sieve to remove the blackberry seeds. Refrigerate for an hour. Store the syrup in an airtight container for up to two weeks.

Simple Syrups add so much to a cocktail (or, in this case, a Poptail). I recently made a Basil Blueberry simple syrup that is so so good.

Frozen Blackberry-Lime Margarita:

Combine tequila, triple sec, lime juice, blackberry simple syrup, and ice in a blender, rim glasses with lime slices and salt. Next, add the lime popsicles, pour margaritas over the popsicles, stir, and garnish with lime slices and blackberries. Most importantly, enjoy your margarita poptail!

Serves 2.

I can see these being served on the deck as the sun sets on a lovely summer day.
