The Yummiest Pineapple Fried Rice

Today I have a treat for you. Some of my blogging besties do a monthly supper club and have asked me to join them this month. And the theme is LUAU! I am so very excited. One, because I love a great theme, and two, I just happen to have a really great recipe on theme.

I am sharing the yummiest pineapple fried recipe. It’s a favorite that my mom used to make!

But first, let’s start with the Luau Dinner Menu.

And now for my mom’s Yummy Pineapple Fried Rice recipe.

Pineapple Fried Rice Ingredients

The recipe is quick and easy, and the secret is always to use day-old rice.

  • 2 tbsp Vegetable Oil
  • 1 tbsp oyster sauce
  • 1.5 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1.5 Garlic cloves
  • 1/2 cup onion
  • 2/3 cup of frozen peas
  • diced bell pepper (red or orange)
  • 1.5 cups of fresh Pineapple (or canned)
  • 1/2 green onion
  • 3 cups of day-old jasmine rice

Directions

  • Heat oil in Wok or large non-stick pan on high heat
  • Add onion and garlic, cook for 1 minute, constantly stirring
  • Add peppers and stir for 1 minute
  • Peas and stir for 30 seconds.
  • Finally, add rice and your sauces, stirring until caramelized.
  • Add the Pineapple and stir until warmed
  • Top with green onions.
  • Serves 4

This is an easy veggie dinner, but you could add egg, chicken or pork.
