Three pretty and pink cocktail recipes- perfect for celebrating love!

Since February is the month we celebrate love, and I love a pretty cocktail for just about any occasion, I thought I’d share my three favorite pretty and pink cocktails that are the perfect festive touch for your Valentine’s celebration.

My idea of a wonderful cocktail recipe is simple.

One, it must be pretty, and two, it must taste delicious!

Add bonus points if they are easy to make!

Giggle Juice Cocktail-Pretty and Pink

Fresh Strawberries and Lemon slices are yummy and very pretty!

First Up: Giggle Juice

Ingredients

  • 750 ML bottle of Champagne

  • 3 cups of Pink Lemonade

  • 1 cup of Lemon-Lime soda

  • 1 cup of vodka

  • 2 cups of sliced strawberries

  • Large Lemon, sliced into half-moons

  • Ice

  • Sugar for rimming the glasses

Directions

  • Rim a pretty glass with a lemon wedge and dip in sugar.
  • In a large pitcher, pour Champagne, Pink Lemonade, soda, and Vodka and stir.
  • Add sliced fruit and ice and stir.

Please note- they do not call this recipe Giggle Juice for nothing!

Don’t skip the sugar on the rim, and It’s simply too pretty to miss.

Makes eight servings.

Pomegranate Mimosa

Ingredients

  • 1 bottle of Champagne

  • 1 cup of Pom Wonderful pomegranate juice

  • Lime for rimming glass

  • Sugar for rimming glass

  • Pomegranate seeds, for garnish

Directions

  • Rim your Champagne flutes with a lime wedge and dip in sugar.
  • Add a teaspoon of Pomegranate seeds to flutes.
  • Fill flutes to 1/2 way with Champagne
  • Top flutes off with Pomegranate juice and serve.

The Pomegranate juice gives these cocktails a lovely color; they are perfect for Valentine’s Day.

I love to serve these for Christmas brunch also.

Valentine’s Day Margarita

Ingredients

  • 1/2 cup freshly squeezed lime juice.

  • 1 cup silver tequila

  • 1/2 cup Triple Sec

  • 750 ML bottle of Pink Champagne

  • Lime Wedges for rim

  • Coarse salt for rim

Okay, in the spirit of 100% disclosure, this cocktail is a very light pink -I don’t want to steer you wrong.

The color comes from using pink Champagne.

You could substitute a Moscato for a darker pink.

Directions

  • Combine all ingredients into a large pitcher and stir well
  • Run lime wedges around rims of glasses and dip in a plate of coarse salt.
  • Divide margarita’s into four glasses, garnish with limes and enjoy!
